Ridge Monkey Chocolate Cake

There are lots of meals you can cook in your ridge monkey, not just toasted sandwiches. They make great omelettes, cook chicken pieces lovely, homemade pizza’s are great cooked in one and some youtubers have made chocolate chip cookies, even an apple pie. But can you cook a chocolate cake in your ridge monkey. Well the answer is, yes you can.

Ridge Monkey Chocolate Cake

100g Plain chocolate.

75g Olive spread or any spread you use.

50g Caster sugar.

2 Eggs.

50g Self-raising flour.

Melt chocolate, spread, and sugar in the microwave.

Whisk in the eggs and flour.

Pour into 1 pan lined with greaseproof paper. 

Heat the other pan and attach to bottom pan with another layer of greaseproof on top first. 

Cook very slowly on smallest flame you can manage. 

Turn after about 4 minutes, then cook about 3 minutes on other side. Check before turning again just lifting back the paper slightly. Should start to rise nicely, filling out each pan.

Keep turning every 1-2 minutes checking each time. Peel back to check middle is cooked and not burning! Both sides should be springy.

I played around a bit with amounts. I used more flour but came out a bit dry so reducing the amount to 50g may make them more squidgy next time!

Maybe add nuts or chunks of chocolate?

Great warmed up in the microwave and add ice cream or custard.
